To be frank there is no "correct stabiliser backing”. Trial and error is the embroiders best friend but there are some basics that all users of these products should be aware of. Tearaway is very easy to remove as its name would suggest. It is best used with firmer more stable fabrics like Denim. Cutaway is a softer but more stable backing and is often used with those more tricky projects such as knits and synthetics. This being said, what is right for you, will not automatically be right for someone else and vica versa.
